Ingredients:

2 cups cooked and cooled rice (preferably day-old) - ½ cup GoodBugs Ginger Ninja Kimchi, roughly chopped
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 small carrot, julienned
- ½ cup shredded cabbage (or other veggies like capsicum or beans)
- 2 eggs
- 2 Tbsp soy sauce or tamari
- 1 Tbsp kecap manis (sweet soy sauce) or substitute with 1 tsp soy sauce + 1 tsp brown sugar
- 1 tsp sesame oil
- 1 Tbsp cooking oil (coconut, vegetable, or peanut oil)
- ½ tsp chili flakes or fresh red chili (optional, for extra heat)
- Protein of choice (prawns, chicken, tofu, or tempeh)
- Fresh coriander and spring onions, for garnish
- Fried shallots, for crunch
- Lime wedges, to serve
Method:
Prepare the eggs: Heat a little oil in a pan, scramble or fry the eggs to your liking, then set aside.
Sauté aromatics: In the same pan, heat the cooking oil over medium heat. Sauté onion, garlic, and ginger until fragrant.
Add veggies & protein: Stir in carrot, cabbage, and any protein you're using. Cook for a few minutes until just tender.
Stir-fry the rice: Add the cold rice, breaking up any clumps. Stir well to combine.
Season & mix: Pour in soy sauce, kecap manis, and sesame oil. Toss everything together.
Kimchi magic: Add the chopped Ginger Ninja Kimchi and mix well, letting it warm through but not cook too much (to keep the probiotics alive!).
Final touches: Stir in the cooked eggs, then taste and adjust seasoning if needed.
Serve hot, garnished with coriander, spring onions, fried shallots, and a squeeze of lime.
